Muffin tin recipes have definitely caught my interest over the past few years. They are a simple and a smart way to control portions. From bite sized omelettes for breakfast to mini apple pies, I have found several recipes that have made it into the regular rotation for meals at home.
Of all the culinary creations I have tried, mini shepard’s pies are at the very top of the list.
You know when they ask a beauty queen what their idea of a perfect date is and they respond with “a candle lit dinner followed by a moonlit walk on a beach,”… well I’m sorry to say they have it all wrong.
For me the perfect date night is one where my husband and I are tag team cooking dinner in our kitchen with our favorite music blasting, spontaneous dancing between chopping and dicing all while I enjoy an ice cold glass of white wine while he sips on his favorite beer. When I got back from the CES show in Vegas, I knew one of the first things I had to buy was the Sengled Pulse LED light bulb. Well, to be completely honest the first thing I REALLY wanted was a 4K TV but a light bulb that plays music was a little more affordable.
The Sengled Pulse is a great way to make your home a little smarter that is completely affordable ($60). With it, I can instantly stream music and regulate the lighting in my kitchen, all from an app on my phone (via Bluetooth). Unlike my iPod dock, that happened to be on it’s way out, this is wireless, has better quality sound and takes up zero space on the counter. It fits right in with the other bulbs in the kitchen.

Confession: I have a love/hate relationship with carbs. As much as I love them I know that I overdo the amount I eat. When I heard a coworker talking about the new food craze Zoodles I couldn’t wait to try them out for myself. Wondering “what are zoodles?” They are spiralized zucchini that look like noodles.
I admit, I wasn’t sure if a spiralized vegetable could replaced my beloved spaghetti but after crunching into my first few bites I was sold.
Zoodles are DELISH! They are light but crunchy with a texture that tricks the mind to look past the fact that they are not actually spaghetti. In addition to being tasty they are one of the easiest foods I have ever cooked. From the time they hit the pan to the plate is only about 5 minutes, which means they are perfect on a work night.
